Hawaiian Bread
1 cup margarine
1 Tsp. soda
1 3/4 cups sugar
2 cups mango pulp
4 eggs
1 1/2 tsp. banana extract
3 cups flour
1 cup macadamia nuts, chopped
1 tsp. salt (optional)
1 cup shredded coconut
Cream the margarine and sugar until very fluffy. Add eggs one at a time while still mixing. Beat well. Sift dry ingredients and add alternately with pulp, nuts, extract and coconut.
Bake in greased loaf pans at 350 degrees for 40 minutes or until toothpick comes out clean. Cool on rack.
